Kitchen Sink Veggie Soup

Lunch today is Kitchen Sink Veggie Soup you have a lot of veggies in your produce drawer? This is a great soup to put any and every vegetable in. I love Karma Chow recipes they’re all vegan but they are so delicious. To me its a life style to cook healthy as often as I can.

My husband is so good he is 6 ft. tall he can eat pretty much what ever he wants and don’t have to worry about it. But I love cooking for him and cooking healthy. This is one of my favorite recipes for so many reasons. It makes me happy! I try to make healthy dishes everyday good for him & me.

I do know I’m a fitness person. I do know that exercise and eating healthy go together. You can’t be successful with just one or the other. You need both. Exercise is fitness, and food is health. Who don’t want to be fit and healthy?  I want to be both!

Pizza Casserole

I made this last night got the recipe from Dr. Axe I love his recipes. My husband tries most everything I make even if he’s not real fond of it. Last night I made this and between the two of us there was not much left. When you hear pizza casserole: it might not sound that healthy. My husband likes pizza occasionally when we get home from work we’re usually hungry so this hit the spot. This recipe is a low-carb meal. It’s made with spaghetti squash, a vegetable that’s packed with fiber and vitamin C. This recipe is also reminiscent of supreme pizza, with a healthy amount of lean ground beef. Dr. Axe uses lean ground bison, we don’t have that in my grocery stores small town. I’m going to keep my eyes open for it though I’d like to try it. This has great taste all the good spices, pizza sauce & cheese. Yum!

  • 1 pound ground bison (I used lean ground beef)
  • 1 onion, diced
  • 6 garlic cloves, minced
  • Sea salt to taste
  • 1 tsp. oregano
  • 1 tsp. thyme
  • 1 tsp. basil
  • 4 cups cooked spaghetti squash
  • 2 cups pizza sauce
  • 2 eggs
  • 1/2 cup pecorino cheese grated
